Pizza Muffins

I needed snack food for the busy week ahead of me and was coming off of a very busy week so it needed to be easy. The next night I dreamt of these fun to make muffins! You can mix in your favorite pizza toppings as long as the won’t add too much moisture.

Note: the muffins will appear a bit soggy after baking if you eat it right away. Have patience to let the muffin cool and settle and you will love it even more!

 

Makes 12 muffins.

Pre-heat oven to 400 degrees. Grease a muffin pan well.

In a large bowl thoroughly combine 2 eggs, 1 T sugar, 2 cups cottage cheese, 1 T dried onion, 1/4 t each garlic powder and dried basil, and 1/2 green pepper chopped finely (make sure pepper is completely dry).

Stir in 1 cup Bob’s Red Mill all purpose flour, 2/3 brown rice flour, 1 1/2 t xanthan gum, 2 t baking soda, 3/4 t salt, 3/4 – 1 cup milk as needed until well blended.

Stir in 1/4 cup chopped sun dried tomato, and 1/2 cup mozzarella cheese.

Scoop into the muffin pan (each cup will be very full), using a wet hand smooth the tops of muffins, sprinkle a little mozzarella or parmesan cheese and Italian seasonings on each muffin.

Bake for 20-25 mins, let cool in for at least 5 mins before removing from pan, cool on wire rack and store in the fridge.

Can a sandwich seal your destiny as BFFs? I’m not convinced it didn’t. Maybe it was the labour of love put into each step of the way. Maybe it was the forethought. Maybe it was the fact that it’s awesome. Whatever it was, Lexi made me one back before she moved to the frozen/boiling hot wasteland that is so many miles away from my home. Now it might be a nice city, with interesting people & weather and all but I miss my sandwich making friend!

Anyhoo, this sandwich was inspired by the time I was super hungry and Lexi made me one.

  • 4 slices toasted gluten free bread
  • 1/2 roasted chicken breast, still warm
  • a few thin slices of onion soaking in cold water
  • Lettuce
  • BBQ sauce
  • 2 Tablespoons mayo
  • 1 Tablespoon yellow mustard
  • 1/2 teaspoon poppy seeds
  1. Mix mayo, mustard, & poppy seeds together. Spread on one side of all bread slices.
  2. Place drained onion on bottom layer of sandwich.
  3. Place chicken on top on onion, drizzle BBQ sauce over.
  4. Place lettuce & tomato slices on remaining slices of bread, place on top of chicken layer.
  5. Enjoy!

Wander Collection

It all started with a ball of yarn. It sparkled and glimmered at me until I would stroke it’s soft alpaca halo. I was hooked after that! Schulana’s Luxair (distributed by Skacel) is currently my all time favorite yarn. I dream of knitting a throw with huge 8 stitch cables all over it. It will be warm, soft, and I’ll never leave the house again if I make it!

Anyway, about the collection. There is four quick knit hats; Adventure, Venture, Embark, and Journey. All of the hats are reversible sans Venture. Adventure, Embark, and Journey finished measurements are: Brims are 17.5” / 45.5cm but it will stretch to fit 23” / 58.5cm, Depths are 8” / 20.5cm. While Venture is a super slouchy with a Depth of 10” / 25.5cm.
